Pineapple Pie
Pineapple Pie is an moderately easy dinner. Made with 1 baked 8-inch pie shell, 2 tbsp. cornstarch, 3/4 c. sugar, 1/2 tsp. salt and 2 3/4 c. crushed pineapple, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Combine cornstarch, 1/4 cup of the sugar and salt in a saucepan.
Add pineapple and cook, stirring constantly, until clear and thickened.
Add egg yolks which have been beaten with 1/4 cup of the sugar.
Cook for 1 minute.
Then add lemon juice and pour into baked pie shell.
Top with a meringue made by beating the 2 egg whites until quite stiff.
