Pineapple Pecan Muffins
Pineapple Pecan Muffins is an moderately easy dinner. Made with 1 1/4 c. milk, 1 1/2 c. all-bran, 1 1/2 c. flour, 1/3 c. sugar and 1/2 tsp. salt (optional), this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Combine milk and bran in large bowl.
Let set 5 minutes.
Sift flour, sugar, salt and baking powder.
Add egg, oil and dry ingredients to milk and bran.
Mix only until all ingredients are moist, should be lumpy.
Stir in pecans and pineapple.
Fill greased muffin tins 2/3 full and bake at 400Β° for 20 to 25 minutes.
Yields fourteen muffins.
