Piña Colada Cake
Piña Colada Cake is an moderately easy dinner. Made with 1/4 c. oil, 1 yellow cake mix, 2 eggs, 1 1/2 c. water and 2 c. coconut, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Pour oil into 9 x 13-inch pan.
In a bowl, combine cake mix, eggs, water and 1 cup coconut; beat until smooth.
Mix in oil from pan, then pour mixture back in pan.
Bake at 350° for 30 to 35 minutes.
Remove from oven and punch holes all over cake.
In a small bowl, beat cream of coconut several minutes, then pour over hot cake.
Refrigerate 1 hour.
Mix Cool Whip and remaining coconut.
Spread on cake.
Store in refrigerator overnight.
