Pickled Peaches
Pickled Peaches is an easy dinner. Made with 7 lb. peeled cling peaches or other small firm ones, 4 lb. sugar, 3 c. vinegar, pinch of salt and 3 tbsp. whole cloves tied in a spice bag, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Combine sugar, vinegar, salt and spice in a large kettle. Bring to a boil and boil for 5 minutes.
Add a dozen peaches at a time and cook slowly until tender.
Remove and pack in sterilized jars.
Continue to cook peaches 12 at a time until all are cooked and packed in jars.
Boil the remaining syrup over moderate heat for about 15 minutes or until thick as desired.
Pour over peaches in jars and seal.
