Perfect Pot Roast
Perfect Pot Roast is an impressive dinner you can prepare in about 2 hours 28 minutes. Preheat oven to 350Β°.
Heat oil in heavy Dutch oven.
Add meat and brown on all sides.
Remove meat and add onion, celery and garlic.
Cook until tender.
Add rest of ingredients.
Drain off fat.
Add meat.
Cover and cook 2 1/2 or 3 hours.
Transfer meat to warm platter.
Strain and return sauce to stove; work in cornstarch.
Bring to a simmer, stirring often until thickens. Season with salt and pepper.
Slice meat and pour some of the gravy over the meat.
Pass the rest.
Serves 8.
