Peppers with Cream Cheese

Wash and dry peppers.
Cut off stem end of pepper, taking a little of the pepper with you.
Remove stem and finely chop the excess pepper.
Remove seeds from peppers; set aside.
Blend cream cheese and whipping cream until smooth.
Add Cheddar cheese and paprika and cayenne (optional); blend well.
Add parsley and the chopped peppers; mix well.
Fill peppers with mixture.
Let stand in refrigerator for at least 2 hours or in freezer for 20 minutes. Cut into thin slices and serve.
