Pepperoni Chicken
Pepperoni Chicken is an moderately easy dinner. Made with 2 lb. chicken, boneless, skinless, cut up in 1-inch pieces, 2 sticks pepperoni, sliced, 1 large white onion, sliced, 1 can stewed tomatoes and 2 to 3 medium zucchini, cut up, this recipe delivers authentic, satisfying flavors. In large frying pan, cook chicken in olive oil until it turns white.
Remove chicken, add more olive oil and fry onions until clear.
Add pepperoni and chicken.
Cook five minutes, then add mushrooms, tomatoes, spaghetti sauce mix and wine.
Cook five minutes.
Add zucchini, cover and cook 5 to 10 minutes longer. Serve over rice.
