Pepper Steak
Pepper Steak is an moderately easy dinner. Made with 1 1/2 lb. boneless round steak, cut cross grain into thin strips, 1 clove garlic, minced, 1/4 c. olive oil, 2 large tomatoes, skinned and chopped and 4 medium green peppers, seeded and cut into strips, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Brown the meat and garlic in olive oil.
Stir in tomatoes, peppers, soy sauce, pepper, sugar, ginger and 3/4 cup stock. Cover and cook 20 minutes or until meat is tender.
Blend cornstarch with remaining stock.
Stir into meat mixture.
Bring to boil and simmer 2 minutes, stirring constantly.
Serve over rice.
