Pepper Relish(Cooked)
Pepper Relish(Cooked) is an moderately easy dinner. Made with 2 doz. red peppers, 2 doz. green peppers, 8 large onions, 2 qt. vinegar and 1/4 c. salt, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Remove the stems and seeds from the red and green peppers. Chop vegetables in the grinder, using large blade. Pour boiling water over vegetables to cover.
Let stand for 5 minutes.
Drain. Again pour boiling water over the vegetables and allow to stand 10 minutes.
Drain for 1 hour.
Add the vinegar, salt and sugar and cook for 1 hour.
Then put into hot jars, not cold ones.
Makes 6 pints.
