Pepper Jelly
Pepper Jelly is an easy dinner. Made with 3 large bell peppers (green or red), 5 or 6 hot peppers, chopped, 1 1/2 c. white vinegar (5% acidity), 6 c. sugar and 1 1/2 bottles certo or 3 pkg. food coloring (green or red, depending on color of peppers), this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Combine peppers and vinegar and purée in blender of food processor in 2 or 3 batches.
Combine purée with sugar and bring to a rolling boil.
Boil for 5 minutes.
Add food coloring and remove from heat.
Add Certo and stir well.
Return to heat and boil for 1 minute.
Strain through sieve and skim off any foam. Pour in sterilized jars and seal.
