Penne Alla Napolitana
Penne Alla Napolitana is an moderately easy dinner. Made with 12 oz. penne (mostaccioli), 4 tbsp. olive oil, 2 tbsp. finely chopped garlic, 1 c. pitted olives, sliced and 1/4 c. packed fresh basil leaves, chopped, this recipe delivers authentic, satisfying flavors. Cook mostaccioli for 8 to 10 minutes.
Drain; toss with one tablespoon olive oil.
Return to pan and keep warm.
Saute garlic slowly in three tablespoons of olive oil until softened but not browned.
Add olives, basil, red pepper and tomato sauce.
Heat; stir in cheeses and heat, stirring until chunks begin to melt. Pour over mostaccioli.
