*Pecan Date Pudding
*Pecan Date Pudding is an moderately easy dinner. Made with 1 1/4 c. all-purpose flour, 1/4 tsp. baking powder, 1/4 tsp. salt, 1 (7 1/4 oz.) pkg. pitted dates and 1 tsp. baking soda, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Sift flour, baking powder and salt together.
Cut up dates in a mixing bowl.
Sprinkle soda over them and add boiling water.
Stir a few times and let stand.
Cream shortening and sugar; beat in egg.
Mix in flour, then date mixture and nuts.
Pour into greased 9-inch square pan and bake at 300Β° for 1 hour.
Cool in pan.
Serve with whipped cream or ice cream.
Makes 9 (3-inch) squares. Freezes well.
