Pecan Cake
Pecan Cake is an moderately easy dinner. Made with 2 lb. seedless raisins, 2 lb. shelled pecans, 4 c. flour, 2 c. sugar and 1 heaping tbsp. baking powder, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Mix raisins and pecans together and sprinkle with a little flour.
Set aside.
Mix thoroughly all dry ingredients.
Cream butter; add sugar and cream well.
Beat eggs well with a fork and add slowly to butter-sugar mixture; mix well.
Add molasses and apple juice.
Fold in dry ingredients; add nuts and raisins. Bake at 300Β° for 3 hours.
(I make this in two angel food cake pans and bake 1 1/2 to 2 hours.)
When cool, wrap in cloth soaked in apple juice for at least two weeks before serving.
