Peanut Soup
Peanut Soup is an moderately easy dinner. Made with 2 c. raw skinned peanuts, 2 liters chicken broth seasoned with salt, cumin and garlic, 1 large onion, chopped, 4 large potatoes, cut up (raw) and 4 carrots, chopped, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Grind the peanuts in a blender.
With a little oil, saute the peanuts in a skillet, but not until brown.
Put the peanuts, broth, onion, potatoes and carrots in a large pot.
Boil for 30 minutes. Add rice and peas and cook for 15 minutes more.
Serve hot with crushed parsley and French fried potatoes on top.
