Peanut Butter Fudge
Peanut Butter Fudge is an moderately easy dinner. Made with 3 c. sugar, 3/4 c. butter or margarine, 1 (about 5 oz.) can evaporated milk, 1 (7 oz.) jar marshmallow cream and 1 (12 oz.) jar chunky peanut butter, this recipe delivers authentic, satisfying flavors. Mix together sugar, butter and evaporated milk in a glass casserole (3-quart size).
Microwave, uncovered, on Full power for 5 1/2 to 6 minutes or until mixture comes to a boil.
Stir once or twice during cooking period.
Microwave, uncovered, on Full power 3 more minutes.
Stir mixture occasionally to prevent it from boiling over casserole.
Stir in marshmallow cream and beat about 30 seconds.
Stir in vanilla and mix well.
Pour mixture into a greased pan (9 x 13-inch).
Refrigerate until chilled.
Makes 3 pounds.
