Peanut Butter Caramel Corn
Peanut Butter Caramel Corn is an moderately easy dinner you can prepare in about 1 hour 52 minutes. Made with qt. (12 c.) popped popcorn, c. light brown sugar, c. peanut butter, c. light corn syrup and c. water, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Preheat oven to 200°.
Lightly oil a 9 x 13-inch baking pan with oil.
Place popcorn in oiled pan and keep popcorn warm in oven while preparing peanut butter syrup.
In a large saucepan, combine brown sugar, peanut butter, corn syrup, water, oil and salt.
Bring to a boil, stirring frequently.
Stir in baking soda and quickly pour syrup over popcorn.
Gently stir until popcorn is well coated. Bake at 200° for 1 hour, stirring every 20 minutes.
Remove from oven.
Stir and let cool.
Break into clusters.
Store in airtight container.
Makes 12 cups caramel corn.
