Peanut Brittle
Peanut Brittle is an moderately easy dinner. Made with 3 c. sugar, 1 c. corn syrup, 1/2 c. water, 1/2 tsp. salt and 1 lb. spanish peanuts, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Boil sugar, corn syrup, water and salt to 250°.
Add 1 pound peanuts; cook to 280°, then add 1/4 cup butter and vanilla.
Cook to 285° to 290°.
Remove from heat and add 1 teaspoon baking soda. Pour onto 3 buttered baking sheets.
Pull out thin as mixture cools.
When completely cooled, break into pieces and store in airtight containers.
