Peanut Brittle
Peanut Brittle is an moderately easy dinner. Made with 1/2 c. light corn syrup, 1 c. sugar, dash of salt, 1 c. raw spanish peanuts, shelled and 1 tsp. vanilla, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

In a 1-quart microproof bowl, mix corn syrup, sugar, salt and peanuts.
Microwave on High for 7 to 8 minutes.
Stir in vanilla and butter, continue on High for 2 or 3 minutes.
Mixture should be slightly browned.
Add baking soda and stir quickly.
Pour onto lightly greased cookie sheet, let cool.
Break into pieces.
Makes 1 pound.
(Double cook 10 minutes.
Add butter and vanilla.
Cook 7 minutes, then add rest.)
