Peanut Brittle
Peanut Brittle is an moderately easy dinner. Made with 2 c. sugar, 1 c. light corn syrup, 1/2 c. water, 2 1/2 c. raw peanuts and 1 tbsp. butter or margarine, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Combine sugar, syrup and water in saucepan; cook over low heat until mixture comes to a boil.
Add peanuts and cook until candy thermometer registers 290Β°.
Remove from heat.
Add butter, salt, vanilla and baking soda, mixing well.
Spread thinly onto 2 buttered cookie sheets.
Cool and break into pieces.
Yield: about 2 pounds.
