Peanut Brittle
Peanut Brittle is an moderately easy dinner. Made with 2 c. sugar, 1/4 c. water, 2 tbsp. butter, 2 tsp. soda and 1 c. white karo, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

In 3-quart saucepan, combine sugar, syrup, salt and water. Mix well.
Cook over medium heat, stirring constantly, until sugar is dissolved.
Cook to 285°, stirring frequently.
Add peanuts and continue cooking until thermometer reaches 295°.
Remove from heat.
Add vanilla and soda.
Mix well.
Work fast.
Pour into 2 greased pans.
Spread quickly as thin as possible for extra brittleness.
