Peanut Brittle
Peanut Brittle is an moderately easy dinner. Made with 2 c. raw peanuts, 1/2 c. hot water, 1/2 c. white karo syrup, 1 1/2 c. sugar and 1/2 stick margarine, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Mix sugar, Karo syrup and water in heavy skillet.
Cook about 10 minutes (until you see a white string thread), stirring occasionally.
Add peanuts; cook about 8 minutes or until mixture turns light caramel color (stir constantly).
Add margarine and stir real fast until margarine melts.
Add baking soda; stir until well mixed.
Pour onto a heavily buttered platter or cookie sheet. Let cool then break into pieces.
