Peel and wash peaches.

Cut peaches in slices and cut out seed. Put peaches in boiler and cover with water.

Put on stove; bring to a boil.

Boil for 10 minutes or when peaches look tender (the longer the peaches boil the tougher they get).

Turn down on low heat and mash up the peaches while covered with water (use potato masher) until chopped well.

Pour 5 pounds sugar in boiler and stir until sugar is dissolved.

Bring back to a boil on high heat to make syrup for preserves.

Be sure not to let boil over.

Cut heat down to low to keep preserves from burning.

Be sure and stir often.

Be sure everything is grease free.

When peach preserves are ready, place in pint jars and turn upside down to cool.

Will need approximately 6 to 12 jars, depending on how many peaches are in the basket.
