Peach Poppy Seed Muffins
Peach Poppy Seed Muffins is an moderately easy dinner. Made with 2/3 c. pureed ripe peaches or junior baby food peaches, 1 tsp. baking powder, 10 tbsp. butter or margarine, 2 eggs and 1 c. sugar, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Stir baking soda into pureed peaches.
Be prepared for the mixture to foam.
Cream butter or margarine and sugar until mixture is smooth.
Add eggs, one at a time.
Alternately add flour and peach purée.
Stir in salt, vanilla and poppy seed.
Fill greased muffin cups almost to top.
Bake at 350° for 20 to 25 minutes, or until wooden pick inserted into a muffin comes out clean.
Makes 12 to 18 muffins, depending on size.
