Peach Marshmallow Icebox Cake
Peach Marshmallow Icebox Cake is an moderately easy dinner. Made with 1/3 c. butter, 1 c. confectioners sugar, 2 eggs, separated, 1 tbsp. gelatin and 1/4 c. cold water, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Mix butter, confectioners sugar and beaten egg yolks.
Cook over low heat until thick (stirring constantly).
Remove from heat.
Add gelatin that has been soaked in cold water 5 minutes. Cook slightly.
Add cut up marshmallows.
Cook thoroughly.
Add peaches.
Add stiffly beaten egg whites.
Place in mold, beginning and ending with vanilla crumbs.
Chill in refrigerator.
Serve plain or with whipped cream.
