Pastel De Elote
Pastel De Elote is an moderately easy dinner. Made with 1 c. flour, 1 c. yellow corn meal, 4 tsp. baking powder, 1/4 tsp. salt and 1/2 tsp. pepper, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Flour, measure and sift with corn meal and baking powder and into mixing bowl.
Cream butter and sugar in another bowl and add eggs one at a time, mixing in well.
Add chilies, corn cheese; mix well.
Blend creamed mixture into flour mixture.
Pour into greased and floured baking dish (8 x x 2-inch) and put into preheated oven (350°).
Bake for 5 minutes at 350° reduce to 300° and bake for 55 minutes.
Time of preparation: 30 minutes.
Serves 8.
