Pasta Primavera(Springtime Pasta)
Pasta Primavera(Springtime Pasta) is an impressive pasta dish you can prepare in about 1 hour 36 minutes. Made with . olive oil, medium diced onion, . chopped garlic, to 4 c. sliced vegetables (zucchini, squash, red and green pepper, fresh mushrooms, cauliflower or broccoli) and (14 oz.) can diced tomatoes, drained (reserve juice), this recipe delivers authentic, satisfying flavors. Cook pasta.
Saute onion and garlic in medium skillet about 1 minute.
Add vegetables and saute 3 to 4 minutes.
Stir in reserved tomato juice, tomato paste and water.
Simmer 5 to 8 minutes or until vegetables are tender.
Add tomatoes and basil, salt and pepper.
Simmer another couple of minutes.
Serve over pasta.
Garnish with olives.
