Pasta Picnic Salad
Pasta Picnic Salad is an moderately easy dinner. Made with 2 c. rotini pasta, uncooked, 1 (3 1/2 oz.) pkg. sliced pepperoni, 2 avocados, peeled, sliced into small chunks and sprinkled with lemon juice, 2 c. sliced fresh mushrooms and 2 c. cherry tomatoes, halved, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Cook pasta according to package directions.
Rinse with cold water. Drain well. Combine with remaining ingredients, mixing gently, but thoroughly.
Cover and chill 4 hours or overnight. Yields 6 servings.
