Thaw and drain spinach.

Saute garlic, onion and mushrooms in 3 tablespoons olive oil.

When soft, add tomatoes.

Season with oregano, basil, bay leaf, salt and pepper.

Simmer 20 minutes.

Serve over pasta with grated cheese.
