Pasta Florentina
Pasta Florentina is an moderately easy dinner. Made with 3 cloves garlic, 1 small onion, chopped, 8 oz. fresh mushrooms, 10 oz. chopped spinach and 28 oz. can italian plum tomatoes, sliced with juice, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Thaw and drain spinach.
Saute garlic, onion and mushrooms in 3 tablespoons olive oil.
When soft, add tomatoes.
Season with oregano, basil, bay leaf, salt and pepper.
Simmer 10 to 12 minutes.
Add spinach.
Simmer 20 minutes.
Serve over pasta with grated cheese.
