Parsnip Pie
Parsnip Pie is an moderately easy dessert you can prepare in about 1 hour 18 minutes. Made with c. parsnip, peeled and thinly sliced, c. leeks, sliced, . olive oil, c. extra good parmesan cheese, grated and c. onions, minced, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Saute parsnips, leeks, onions and garlic in olive oil over medium heat; do not allow this mixture to brown.
You can mix a little butter with your olive oil if you like.
Layer mixture alternately with Parmesan cheese into crust.
Some times we mix in some sauteed spinach as well.
Season to taste.
Bake at 350Β° for 45 minutes.
Top with sliced tomatoes.
Serves 6 to 8.
