Parsley Minute Rice
Parsley Minute Rice is an moderately easy dinner. Made with 1/3 c. green onions (tops only), 1/3 c. green bell peppers or combination of green and red bell peppers, 1/2 c. fresh parsley (not stems), 1/3 c. celery, thinly sliced and 2 tbsp. shredded carrot (optional), this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Chop green onions, bell peppers and parsley.
Add thinly sliced celery and shredded carrot; set aside.
Bring water, salt and butter to a boil.
Stir in rice and vegetable mixture.
Cover and remove from heat.
Allow to set for 5 minutes, then fluff with fork before serving.
