Parmesan Baked Potatoes
Parmesan Baked Potatoes is an moderately easy dinner. Made with 6 baking potatoes, 1 green onion, thinly sliced, 2 eggs, slightly beaten, 1/3 c. parmesan cheese and 1/4 c. margarine or butter, melted, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Scrub potatoes.
Lightly grease skins.
Bake in a 400° oven for 1 hour or until done.
Cut thin slices off top of potatoes. Scoop out inside and mash.
Add onion, eggs, 1/3 cup Parmesan cheese, margarine, salt, pepper and enough hot milk to desired consistency. Beat until fluffy.
Carefully pile mixture into potato shells.
Brush tops with additional margarine.
Sprinkle with Parmesan cheese and paprika. Bake in a 350° oven for 20 to 30 minutes.
