Oven-Fried Eggplant
Oven-Fried Eggplant is an moderately easy dinner. Made with 1 peeled eggplant, 1 egg, 1 c. dry bread crumbs, 1/8 tsp. pepper and cayenne and 1 1/2 tsp. parmesan, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Heat oven to 375Β°.
Slice eggplant in 1/2-inch slices.
Beat egg.
In bowl (flat bottom), combine crumbs and seasonings.
Dip slices in egg, then in crumb mixture.
Place on preheated cookie sheet that has been greased with 1 tablespoon Crisco.
Continue coating slices and adding to hot cookie sheet.
Bake 15 minutes, turn over and bake 15 more minutes.
