Orange-Raisin Fruitcake
Orange-Raisin Fruitcake is an moderately easy dinner. Made with 1 orange (extract juice and reserve), 1 1/2 c. raisins, 1/2 c. nuts (i use peanuts), 1/2 c. vegetable shortening and 1 c. sugar, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Extract orange juice, then put orange pulp, rind, nuts and raisins through food chopper.
Keep 1/4 cup of nut mixture for topping.
Mix remainder with orange juice, sugar and shortening until light and fluffy.
Add eggs. Mix.
Add flour, soda, salt and buttermilk.
Mix well and pour into a tube pan.
Bake 45 minutes at 350Β°.
