One Pan Autumn Chicken Roast is an moderately easy dinner. Made with large sweet potato, brussels sprouts, apples, skins on chicken thigh and olive oil, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Preheat the oven to 400˚F (200˚C).
On a baking sheet, toss the sweet potato, Brussels sprouts, and sliced apples so they’re evenly distributed.
Lay the chicken thighs on top.

Sprinkle with the garlic, rosemary, and thyme.
