Olde English Chess Pie
Olde English Chess Pie is an moderately easy dinner. Made with pastry for 9-inch pie, 1/2 c. dried currants, 3/4 c. sugar, 3 tbsp. flour and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Soak currants in hot water until plump.
Drain.
Line a 9-inch pie pan with pastry.
Spread currants evenly over pastry.
Beat together sugar, flour, salt, mace, vanilla, sour cream, buttermilk and egg yolks.
Fold in stiffly beaten egg whites.
Pour into pie pan and bake at 400° for 10 minutes, then at 350° for an additional 25 minutes.
