Old Fashion Tea Cakes
Old Fashion Tea Cakes is an moderately easy dinner. Made with 1 c. sugar, 1/3 c. shortening or lard, 1 egg, 1/2 tsp. nutmeg and 1/2 tsp. vanilla, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Grease a baking sheet lightly.
Start oven 10 minutes before baking.
Set to moderately hot, 415° to 425°.
Measure sugar and shortening and cream well.
Add egg and beat until smooth and fluffy.
Stir in nutmeg, vanilla and salt.
Stir soda into buttermilk and add flour and buttermilk, a bit at a time.
Begin and end with flour.
Stir until smooth.
Remove 1/3 of dough at a time to floured cloth and roll out about 1/8-inch thick. (Sprinkle with sugar.)
Cut out and lift to pan with pancake turner.
Bake 8 to 10 minutes (just blonde, not brown).
Makes 36 Tea Cakes.
