Old Fashion Tapioca Pudding
Old Fashion Tapioca Pudding is an easy dinner. Made with 2 c. milk, 1/4 c. pearl tapioca, soaked for 8 hours, 1/2 c. sugar, 3 eggs and 2 tsp. vanilla, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Over medium heat in heavy saucepan, cook the milk and tapioca until tapioca is clear.
Mix egg yolks and sugar in a medium bowl. Add milk mixture to egg mixture, a little at a time.
Return to saucepan and cook until thick. Remove from heat. In another bowl (large), beat egg whites until stiff. Fold milk mixture into egg whites, a little at a time.
Add vanilla.
Refrigerate.
