Okra Gumbo
Okra Gumbo is an impressive dinner. Made with 1 (16 oz.) pkg. frozen, cut okra, cooked and drained, 3 tbsp. oleo, 1 c. finely chopped green onions, 1 medium chopped bell pepper and 2 cloves garlic, chopped, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
In a 4-quart pan, gently melt oleo.
Add onions, bell pepper and garlic.
Saute until softened.
Add tomatoes, tomato sauce and chicken broth.
Bring mixture to a boil.
Reduce heat.
Add seasonings, chicken, ham and okra.
Simmer for 30 to 40 minutes. Serve over fluffy white rice.
