Nicole's Black Bean Relish
Nicole'S Black Bean Relish is an moderately easy dinner. Made with 1/4 c. chopped onion, 1/4 c. chopped celery, 1/4 c. chopped carrot, 3 gloves garlic, minced and 2 jalapeño peppers, chopped, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

In medium saucepan, cook onion, celery, carrot, garlic and jalapeño peppers in butter or margarine until onion is tender. Stir in black beans, ham, cilantro or parsley and salt.
Bring to boil; reduce heat.
Simmer, uncovered, for 10 minutes or until desired consistency.
Makes about 2 cups.
