New Orleans Jambalaya
New Orleans Jambalaya is an impressive dinner. Made with 3 tbsp. oil, 1 onion, 2 green peppers, 3 cloves garlic and 4 stalks celery, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Place 3 tablespoons oil in saucepan.
Add chopped onion, chopped green peppers, minced cloves of garlic, sliced celery and green onions.
Saute until limp.
Add tomatoes and chicken broth (covered); cook 1/2 hour or so.
Then add sausage (I use Hillshire Farms beef kielbasa), diced ham, parsley, Worcestershire sauce, Tabasco and thyme.
Simmer covered for 20 minutes.
Add raw rice. Cook 25 minutes more (covered).
Good hot or cold.
