Heat milk in saucepan.
Do not boil.
Beat eggs in, boil.
Add salt, gradually beat in sugar. Beat 1 cup of hot milk in egg mixture.
Then add egg mixture to remaining hot milk mixture in saucepan. Beat constantly.
Cook over low heat, stirring constantly until thickens and 160Β° on candy thermometer.
Stir in 1/2 teaspoon nutmeg and vanilla.
Place saucepan in large bowl of ice for 12 minutes.
Cover and refrigerate 24 hours.
