Mykonos Salad
Mykonos Salad is an moderately easy dinner. Made with 1/2 head iceberg, washed and torn, 1/2 head romaine, washed and torn, 2 or 3 tomatoes, quartered, 1 medium onion, sliced thin and 1 bell pepper, sliced thin, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Make dressing of 1/2 cup olive oil, 1/4 cup salad vinegar (part balsamic), salt and pepper.
Toss lettuces with next 6 ingredients.
Pour dressing over salad; toss again.
Top with Feta cheese. (I usually pit the olives.) Makes 6 servings.
