My Mom's Meat Loaf
My Mom'S Meat Loaf is an moderately easy dinner. Made with 2 lbs. ground beef, 1 egg, 1/4 c. milk, 3/4 c. bread crumbs (garlic and herb work well) and 3 tbsp. minced onion, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Combine first six ingredients.
Form into a loaf and place in a large baking pan.
The bottom of an oven broiler works well. Place in an oven at 350 degrees and begin cooking uncovered for 30 minutes. Dissolve the bouillon cube in 1 C. water.
Drain any grease from pan.
Pour beef broth over meat loaf and return to oven for another 30 minutes.
Make up gravy packages according to directions on pack.
Pour over meat loaf.
Continue cooking another 30 - 50 minutes until done.
Internal temperature of 155 degrees.
Baste with gravy several times while cooking.
