My Favorite Sweet Potato Recipe is an easy dinner. Made with 6 medium-size sweet potatoes, peeled and diced, 1 (21 oz.) can apple pie filling, 1 (8 oz.) can whole cranberry sauce, 2 tbsp. apricot preserves and 2 tbsp. orange marmalade, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Cook potatoes in a large saucepan in enough salt water to cover.
Cook about 15 minutes or until tender. and set aside.
Spread pie filling in an 8 x
2-inch baking dish. Arrange cooked potatoes on top.
In a small mixing bowl stir together cranberry sauce, apricot preserves orange marmalade. Spoon over sweet potatoes.
Bake uncovered at 350Β° for 20 to 25 minutes.
