Mushrooms Florentine
Mushrooms Florentine is an moderately easy dinner. Made with 1 clove garlic, chopped, 1/2 c. (1 stick) butter, 1 lb. mushrooms, sliced, 3 pkg. frozen chopped spinach, thawed and drained and 1/4 c. chopped onion, this recipe delivers authentic, satisfying flavors. Saute garlic in 1/4 cup butter.
Remove garlic; saute mushrooms.
Combine spinach, onion and remaining 1/4 cup melted butter.
Salt and pepper to taste.
With this mixture, cover the bottom of a 10-inch shallow casserole.
Sprinkle with half the cheese.
Cover with mushrooms, then remaining cheese. Refrigerate, if desired.
