Mrs. Lou Holtz's Spinach Squares
Mrs. Lou Holtz'S Spinach Squares is an moderately easy dinner. Made with 2 (10 oz.) pkg. chopped frozen spinach, 3 tbsp. butter or oleo, 1 medium onion, chopped, 1/4 lb. mushrooms, sliced and 4 eggs, beaten, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Place spinach in strainer.
Rinse under hot water to thaw. Then press out all water.
Melt oleo in skillet.
Add mushrooms and onions.
Cook on medium heat until onions are limp.
In separate bowl, combine eggs, bread crumbs and mushroom soup with 2 tablespoons of the Parmesan cheese, the spinach and seasonings. Blend in the onion-mushroom mixture.
Place into 9-inch square pan.
Sprinkle remaining cheese on top.
Bake, uncovered, for 35 minutes or until set in a 325Β°
Cut in squares to serve hot or refrigerate and cut smaller for cold hors d'oeuvres.
