Mrs. Christopher's Cheese Potato Casserole
Mrs. Christopher'S Cheese Potato Casserole is an moderately easy dinner. Made with 6 medium irish potatoes, 3 c. grated sharp cheddar cheese, 2 eggs, beaten, 1 1/2 c. milk and 1 1/4 tsp. salt, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Peel and cook potatoes until tender.
Drain and mash well. Add 1 1/2 cups of the Cheddar cheese, eggs, milk, salt and onions, blending thoroughly.
Pour in casserole and top with the remaining cheese.
