Mother's Fresh Coconut Cake
Mother'S Fresh Coconut Cake is an moderately easy dinner. Made with 3/4 c. shortening, 3 unbeaten eggs, 4 1/2 tsp. baking powder, 1 1/2 tsp. vanilla and 2 1/4 c. sugar, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Cream shortening and sugar.
Add 1 egg at a time, beating after each.
Mix flour, baking powder and salt together.
Add alternately with milk.
Continue beating at medium speed, scraping sides of bowl with a rubber spatula or wooden spoon.
Add vanilla. Bake in 11 x 7-inch pans (3) for 35 minutes at 350Β°.
Let cake cool.
Frost with Mother's Coconut Cake Frosting (recipe follows).
