Morning Glory Muffins
Morning Glory Muffins is an impressive dinner. Made with 2 c. flour, 1/2 tsp. salt, 2 tsp. soda, 2 tsp. cinnamon and 1 1/4 c. sugar, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Combine the first 4 ingredients in a large bowl.
Stir in sugar, then add carrots, apples, pecans, coconut and raisins. Combine and add to dry ingredients the eggs, vanilla and oil. Stir just until moistened.
Spoon batter into greased muffin pan, filling 3/4 full.
Bake at 375Β° for 18 to 20 minutes, or until golden brown.
Makes 2 dozen.
