Moon Cake
Moon Cake is an moderately easy dinner. Made with 1 c. water, 1/2 c. margarine or butter, 1 c. flour, 4 eggs and 2 small boxes vanilla instant pudding, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Mix water and margarine together.
Bring to a boil. Add flour all at once and stir rapidly until mixture forms a ball.
Remove from heat and cool a little while.
Beat in eggs, one at a time, beating well with spoon or mixer.
Spread on ungreased cookie sheet, 11 x 15-inches.
Bake at 400Β° for 30 minutes.
(It will look like the moon's surface, all lumpy and bumpy, that's why it's called Moon Cake!)
Don't prick, leave cake as is.
